Method
Peel onion and chop finely. Crush peel and chop garlic. Heat oil in a frying pan and sauté onion and garlic for 5 minutes or until onion is clear. Set aside.
Add salmon steaks to pan and cook for 2 minutes each side or until just cooked. Cut salmon into chunks, removing skin and bones. Mix yogurt, pesto, onion, garlic and parsley together.
Cook penne to packet directions. Drain well. Toss through yogurt mixture, top with salmon and garnish with fresh herbs. Serve immediately.
