Light and Tasty Lemon Yoghurt Pancakes
Ingredients
1 egg 1/2 cup EasiYo low fat lemon yoghurt or 1/2 cup plain EasiYo Low Fat yoghurt 1/2 cup milk 2 tablespoons canola oil 1 tablespoon sugar 1/2 teaspoon nutmeg 1 cup flour 1 teaspoon baking powder 1/2 teaspoon baking soda

Method
Prep Time: 5 mins Total Time: 15 mins
1. In a bowl, beat the egg and mix in the yoghurt, milk and oil. 2. Stir in sugar and nutmeg. 3. In separate bowl, combine flour, baking powder and baking soda. 4. Add the flour mixture to the liquid and mix. The batter will be thick. 5. Grease and heat a griddle and pour out 1/4 C batter. 6. Cook pancakes until they begin to bubble, then turn and cook on other side. 7. Serve warm with EasiYo Cherry Plum Fruit Squirt.
